5 quick dinners!

Hello :) Here's the thing. My friend is home alone for a few weeks and I hate to say it, but he can't really cook too well. He confessed he's been eating pasta for most of the week. He's been cooking pasta with chicken and lots of vegetables so that's great, but can get rather boring. 

So I've decided to come up with a few quick dinners he can make. Unfortunately he's not vegetarian (so sad!) and is super weird, not liking yummy things like eggs and avocado. So quick omelettes and avocado on toast are out of the question!

1. Chicken stir fry with vegetables and hokkien noodles (quicker than rice)
Cut up chicken breast into small slices and add to a wok/pan with olive oil and soy sauce. Then add finely chopped vegetables (mushrooms, carrots & broccoli) and pre-cooked hokkien noodles and stir for a few minutes. Serve with some more soy sauce and sweet chilli sauce, and sesame seeds on top.


2. Fish with mashed potato and green beans
Cook a piece of frozen fish in the oven according to the packet instructions. Whilst that's cooking boil 2 potatoes, mash with some milk & butter and boil some green beans. If you can cook fresh fish A thats preferable, but I know you like frozen fish ;)


3. Potato and zucchini fritters. 
Leah posted this great recipe here and I think they would be great to make! Simple, quick & delicious! Fritters are perfect.


4. Roast vegetables and chicken 
Roast veges you have, potatoes, carrots, and sweet potato perhaps with some salt and olive oil and serve with some BBQ chicken, or chicken breast. I don't really know how to cook chicken though...

5. Lamb chops with beans and corn on the cob 
Cook a few lamb chops under the griller as you do (I have no idea how to...) and serve with corn and green beans/broccoli


Now as you can see I'm not too much help, as I don't really know how to cook meat, so I'm asking you vegetarians and meat eaters alike, what are some classic, quick meals you make?

  1. I think you've done a great job! An easy (and relatively healthy meal) that 'non-cooks' can make is burritos! Just buy a burrito kit from the shop, brown up some mince and onion, add the seasoning and serve with the salsa, tortillas (both comes with) cheese and heaps of salad!
