Breakfast challenge: Day One

I've made myself a challenge. I want to see if I can eat something different and healthy for breakfast each day for a week! Breakfast is such an important meal of the day (i'm sure you've been told this over and over), but it's literally breaking the fast after not eating for however many hours, so it's important to eat something nourishing and filling.
Anyway, enough lecturing! This morning I chose to eat porridge, which I usually have when i'm in a rush and need something substantial thats going to fill me up till lunchtime. I tend to also have porridge with Oat Milk, something new i've been trying, as i find it hard to consume dairy in the morning. Sometimes i'll even soak the oats in milk overnight in the fridge, as this softens the grain and makes it easier to digest. This morning was especially cold, so it was the perfect thing to eat! On top I sliced up a nectrine (perfect this time of year!), sprinkled some almonds and sultanas and also drizzled on some honey! And i took a picture of course:

  1. Wow, looks delicious. You've inspired me, I'm making porridge for breakfast too! And I totally agree with you it is really important to have something "nourishing and filling" to break the fast. Looking forward to your next breakfast!

  2. Looks delicious and such a great idea! All too often I rush to work with just a long black and an apple to tide me over until lunchtime.
