Breakfast Challenge: Day Two

What do you do when it's raining outside and you can't go out? Make pikelets of course! To continue this breakfast challenge, I made something i'd typically make on the weekend. I used the 'Nan's pikelet' recipe from Julie Godwin's cookbook 'Our Family Table':

It's probably the easiest recipe i've used for pikelets. Here it is:

What you'll need:
- 1 cup (150g) self-raising flour
- 1 tbs caster sugar
- 1 egg
- 3/4 cup (180mL) milk
- butter (to brush the pan)

Directions:
1. Sift the flour and caster sugar into a medium bowl. Lightly beat the egg in a small bowl and add the milk. Make a well in the centre of the dry ingredients and add the wet ingredients, stirring well. Make sure there are no lumps, then cover and let rest for 30 minutes (I was too hungry/lazy to let the mixture rest for 30 minutes, but it's up to you)
2. Brush a large frying pan with butter and drop tablespoons of the mixture into the pan. Cook over medium heat until bubbles appear over most the of the surface of the pikelets (remember, the first batch will take the longest to cook, however as the pan heats up you'll fine they cook a lot quicker)
3. Turn and cook on the other side until golden brown.

The recipe makes about 12 or so small pikelets, but you could easily double the recipe of you wanted more. Here's some of the pikelets I made served with fresh fruit (kiwi, strawberries and banana), english breakfast tea and raspberry jam (not pictured). Other serving ideas can include: maple syrup, honey, lemon, sugar etc.


Ahh the weekend...sleeping in, reading the paper, making pots of tea and cooking, of course. Yes, I do sound like a Grandma, so perhaps 'Nan's pikelets' were the perfect breakfast to make today.
