In which I roast sweet potato & red onion

Hello :) For lunch today I roasted some vegetables. Here's my step-by-step process:

Step 1:  Preheat oven to 200 degrees celsius

Step 2: Arrange vegetables on a chopping board in an arty manner

Step 3: Cut up vegetables. I cried a little whilst cutting the red onions...

Step 4: Transfer vegetables onto a baking tray with extra virgin olive oil, garlic cloves and sea salt

Step 5: After about 30 minutes, remove from oven. Served on a pretty plate with crumbled fetta and (extra) extra virgin olive oil...haha

As you can see this cooler Autumn weather has prompted me to roast vegetables! Other favourites include parsnip and carrots. I think roasted beetroot would taste delicious too. I remember during high school I used to come home from school and roast sweet potato in the afternoon when it was cold. Gee, I was a healthy kid ;)

  1. Roast vegies are amaazziing. My favourite combo i pumpkin, beetroot & shallots (which I do whole and squeeze the flesh out of on the plate).

  4. My mum's roast veggies are the best, I can never get mine quite as crispy as hers! I do roast a mean eggplant though. PS love the name of your blog!
