Recipe: Armenian nutmeg cake
Ingredients-
2 cups brown sugar
2 cups self-raising flour
125g butter
1tsp bicarb soda
1 tsp nutmeg
1 cup milk
1 beaten egg
1/2 cup chopped walnuts/pecans
Method-
1. Combine sugar and flour. Rub in butter until mixture resembles fine breadcrumbs. Press half (or a bit less) of mixture into greased tin.
2. Dissolve soda in the milk, add beaten egg and nutmeg. Pour over remaining sugar and mixture. Mix well, spoon spoon into tin on top of base mixture.
3. Top with nuts. Bake in 180 degrees celsius oven for 1 hour.
4. Allow to stand for 15 minutes then cool.
The top does look darker than usual because I overcooked it a little (woops!). But it was still super delicious regardless.
The base is biscuit-y (hence why you 'press' half the mixture down), the cake part is moist and spongy and the top is crisp with lots of walnuts...yum! The nutmeg gives it a real kick too. I think cup of chai tea would go perfectly with a slice of this cake :)
Also, when I came back from my run a few hours ago I was very excited that my mother had been food shopping and got some hot cross buns!! It probably undid all my hard work, but oh well! Have you been eating hot cross buns lately??

I love this cake. Brings back many childhood memories, as it was one of my mum's favourite recipes. It is delicious with a dollop of cream, not very dietetics-friendly, but delicious!
