Simplicity chocolate cake

Hello :) Yesterday evening for my mothers birthday I decided to make her a chocolate cake! I didn't really have time to buy ingredients to make something new so I opted for a classic. Chocolate cake is always a winner! And once again I used a recipe from Frankie magazines 'afternoon tea' recipe book (which I've noticed being sold in some newsagents now if you're interested). Without further ado, here is the recipe :)

Recipe: Simplicity chocolate cake
Ingredients-
125g butter
1 cup self raising flour
1/3 cup cocoa powder
1 cup sugar
2 eggs, lightly beaten
1/2 cup milk
1/2 teaspoon vanilla essence
Method-
Preheat oven to 180 degrees. Place butter in a saucepan and melt over heat. Sift flour and cocoa together into a mixing bowl. Add sugar and the lightly beaten eggs, milk, vanilla and melted butter. Stir to combine. Using a wooden spoon or electric mixer, beat hard for three minutes until cake batter changes colour slightly.

Grease and line the bottom of a cake tin. Pour mixture into tin. Bake for 30 to 40 minutes or until a skewer inserted into the centre of the cake comes out clean.



Like I said, this cake is an absolute winner! I've made it several times before and it's always delicious! It's fluffy, chocolate-y goodness, what more could you want? And it literally took me about 5 minutes to make which was great! I served this to my mother on a pretty plate with some raspberries and dollop of whipped cream (not pictured). 

And a few posts ago I said I was going to make those Raw Fudge Balls again. Well I couldn't help but take a few pictures...they just looked so pretty!!


So there you go! Two great recipes using cacao powder. One is a little indulgent and the other super healthy!

  3. Jane- I totally agree!! It's winter and everyone's getting their baking on! And thanks :) Those fudge balls are perfect - as they seem indulgent but they're actually super healthy! x

  4. Look at that cake! It's got the consistency of sponge but it has chocolate in it. what an achievement. I long for cakes that are light and fluffy - most chocolate cakes tend to be so dense.. and it's just too much.
