Cinnamon roast peaches with vanilla yoghurt

Hello again :) Today after a lovely sunny day it's started to rain, and when it rains I want to cook!  So, after dinner I decided to make 'Cinnamon roast peaches with vanilla yoghurt' for a light dessert. It's from (you guessed it) Sophie Dahl's book filed under summer breakfasts. Our peaches were a little under ripe so they weren't as soft and glorious as the picture looked but still a yummy dessert for a rainy night.

Recipe: Cinnamon roast peaches with vanilla yoghurt 
Ingredients:
4 peaches, ripe but firm
1 teaspoon of ground cinnamon
1 tablespoon of soft brown sugar
1 tablespoon of butter or sunflower oil
500mL/2 cups of low-fat Greek yoghurt
1 teaspoon of vanilla extract
1 tablespoon of agave syrup or honey
Fresh mint leaves (optional)
Directions:
Preheat the oven to 210 degrees . Wash halve the peaches, removing the stones, and place in a small roasting tin. Sprinkle each peach half with a little cinnamon and brown sugar and dot with butter or oil. Cook for about 10 minutes (ours took about 20ish minutes- but that might just be our oven).
While the peaches are cooking, mix the yoghurt with the vanilla and agave syrup or honey.
Serve the peaches in bowls doused with the yoghurt, and garnish with a little fresh mint if you feel fancy.

  1. You have selected a nice dessert. I would like to try it with more yogurt. Yogurt mixed with bannana honey and peanut butter is a good recipie for my house and I think that it would go with peaches !
